For those of us with egg allergies, it can be challenging, but no fear \u2013 Aquafaba to the rescue!<\/h6>\n<p><!--more--><\/p>\n<p>I craved meringues for years, knowing that if i were to eat the regular egg white ones I would suffer from itchy skin for days, so, I skipped it for almost two decades\u2026 The other day I randomly found a recipe online and decide to test it out, and to my great surprise it actually tastes just as good as I remember from my childhood.<\/p>\n<p>So what is Aquafaba ?<\/p>\n<p>Aquafaba means : Beanwater ! It is literally the water from a can of chickpeas !<br \/>\nThat thick stuff that usually is wasted down the drain, now has a great new use !<\/p>\n<p>Let us start !<\/p>\n<p>&nbsp;<\/p>\n<h6><span style=\"color: #3db4c3;\"><strong>Ingredients<\/strong><\/span><\/h6>\n<ul>\n<li>Water from 1 can of organic unsalted chickpeas ( organic and unsalted, to be sure it is only water, the foam will not come together if there is either salt or preservatives in the water )<\/li>\n<p> &nbsp;<\/p>\n<li>150 gr. powdered sugar<\/li>\n<p> &nbsp;<\/p>\n<li>A few drops of vanilla extract ( or coconut extract ) to taste<\/li>\n<p> &nbsp;<\/p>\n<li>Optional: Food colouring. I used organic food colouring, red cabbage red, carrot juice yellow and spirulina green (I do not recommend carrot juice nor spirulina, explanation follows)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h6><span style=\"color: #3db4c3;\"><strong>Directions<\/strong><\/span><\/h6>\n<ol>\n<li>Pre-heat the oven to 100\u00b0C<\/li>\n<p> &nbsp;<\/p>\n<li>Sieve the water from the chickpeas into a bowl. Put the chickpeas into a container and save for later use (click <a title=\"Chunky Chick pea Salad\" href=\"http:\/\/taketime.trisendi.com\/?p=401&amp;preview=true\">here<\/a> for chick pea salad recipe)<\/li>\n<p> &nbsp;<br \/>\n<a href=\"http:\/\/taketime.trisendi.com\/wp-content\/uploads\/2016\/03\/aquafaba-1_LR.jpg\" rel=\"attachment wp-att-379\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-379\" src=\"http:\/\/taketime.trisendi.com\/wp-content\/uploads\/2016\/03\/aquafaba-1_LR.jpg\" alt=\"Aquafaba Egg meringues\" width=\"642\" height=\"300\" srcset=\"http:\/\/taketime.trisendi.com\/wp-content\/uploads\/2016\/03\/aquafaba-1_LR.jpg 642w, http:\/\/taketime.trisendi.com\/wp-content\/uploads\/2016\/03\/aquafaba-1_LR-300x140.jpg 300w\" sizes=\"auto, (max-width: 642px) 100vw, 642px\" \/><\/a><\/p>\n<li>Whisk the bean water until bubbles are small and the surface is silky. Advice: I do not recommend suing carrot colour as that breaks up the mix leaving you with deflated yellow crumbs instead of lovely fluffy meringues. <br \/> <br \/>\nAlso, if you should choose to use spirulina for colouring, make sure it is the tasteless kind, made for this specific purpose.
